A mascarpone cream, lightened with raspberries and built upon a soft sponge base, topped with a refreshing raspberry jelly. The lively tartness of the fruit and the silky smoothness of the cream create a balanced yet utterly irresistible dessert. We use our own specially developed sugar substitute blend for this cake, combining erythritol and birch sugar. This ensures the dessert retains its rich, harmonious flavour profile, whilst offering a lighter, more conscious choice without compromise.
