A dessert built on a hazelnut-flour sponge, featuring layers of silky hazelnut mousse and vibrant raspberry mousse, with an intense raspberry filling at the centre. The rich, distinctive flavour of the hazelnut is brought out by the fresh tartness of the raspberry, creating a truly harmonious yet exciting flavour profile.
The cake is made in our own dedicated gluten-free facility, where the possibility of cross-contamination is completely ruled out. The sponge is made using our gluten-free flour blend and almond flour, making it completely gluten-free. We use a sugar-free recipe, incorporating our own specially developed sugar substitute blend (a combination of erythritol and birch sugar). It is dairy-free, as we use plant-based ingredients; it therefore contains no milk protein and no eggs are added, making it suitable for a vegan diet.
